You guys, this one completely shocked me how much my kids loved this dinner! It’s one we had for Sunday lunch…the crock pot did most of the work and when we walked into the kitchen after church, the smell smacked us in the face in the best way possible! So, here’s the recipe:
- 1 Chuck Roast
- 1 tsp cumin
- 1 1/2 tsp chili powder
- salt & pepper to taste
- 2 yellow peppers, sliced (half will be cooked, half stay raw)
- 2 red peppers, sliced (half will be cooked, half stay raw)
- 1 cup diced onions
- 1 can refried beans
- Shredded cheese
- Anything else you want to put on your fajitas
Place the chuck roast in the bottom of the crock pot. Sprinkle and spread the cumin, chili powder, salt and pepper on the meat. Add the onions and the sliced peppers. Cook on high for 4 hours or until done.
Once the meat is done, shred with two forks and place on plate to serve.
Heat up the refried beans and serve along with the remaining raw peppers and fajita fixings, including tortillas.
My kids enjoyed assembling their fajitas themselves and they were eager to gobble them up, too!
